What are Food Safety Management Systems?

A Food Safety Management system (FSMS), as the pyramid below indicates is built upon three foundational concepts or programs: Good Manufacturing Practices (GMP), Prerequisite programs (PRP), and Hazard Analysis and Critical Control Points (HACCP). At Chimera systems, we implement the system in three stages, each part able to stand alone, but at the same time fully integrated into the overall Food Safety Management System, depending on the needs of our client.

  1. We start with the basic GMP & PRP, designing document processes and implementing policies & procedures to verify that all data pertinent to Food safety and quality are recorded. As well as processes to validate that the system is effective in the management of the food safety risk.
  2. We conduct a hazard analysis of all raw materials, products and processes (those required by the client) and establish the Critical Control Points (CCP), making adjustments to the GMP & PRP programs as required.
  3. Finally once the basic foundations have been setup, our client has the option to integrate the FSMS with other aspects of a full business management system according to their needs or the certification they wish to apply for i.e. BRC, FSSC 22000, IFS, SQF and various supermarket specific management systems.
